Good day today. A little on the warm side for this Celt but enjoyable. I'n not at all a hot weather fan & like to be able to be outside busying myself with whatever.
Spent time in the garden weeding & part of that time cussing about the starlings nipping off leaves of my pepper plants. On the overall everything is looking pretty good. I picked the first batch of Collard Greens today. It wasn't long before they were washed, chopped & put in the crockpot to slowly cook with some fatback, salt & pepper. I spied a groundhog eyeing the garden a while back & quickly dispatched him with my Savage .22. Remington subsonic ammo does the job real well. Gardens are always a gamble so I pray for a good harvest. I've really cut back the size of my garden(s) over the last ten years. One can grow a lot in a small space actually. Canning string beans & tomatoes is a real big thing with me along with jalepeno peppers. Dill pickles are a favorite & I like to do them in quarts. I saw three rabbits milling around the yard the other day & my dog ran them off. Of course they are not in season but they will be in the pot if I catch them near the produce.

Pat, Betty and I have got a nice garden going this year. Plenty of rain and the weather just began to get warm like summer. I have a 10” gong hanging at the edge of the woods and yesterday I got in about 40 rounds of prone practice with the Scmidtt Rubin. Life is indeed good. Jeff I think of you in January when it is so cold here that the snot is freezing in my nose.

Dane, Been pulling out the canning jars to see if I'll have enough. We've had plenty of rain also & the tomatoe plants are going crazy. The beans are starting to blossom & I already have tiny little jalepeno & Anaheim peppers. The collards just to the right were picked a few days ago but the keep coming back all season. Pat

I've never grown collards. This year we have spinach, kale, and three kinds of lettuce. Aneheims are good stuffed with cheese and then fried.

Late getting in our garden, and the tomato plants, so it'll be a bit of a wait, although we've got some small green tomatoes already, so they're beginning to get the idea. My wife tried something different this year, and planted squash and cucumbers in large pots, with what looks like potting soil in the pots, 100%. Right now, the idea doesn't look so good. Major problem here is the deer. They love gardens, (I fenced mine) and rabbits, who raise Cain with my decoratives. Spraying with Deer Off every few days is the only way I can keep the stuff growing. (And keep the deer from growing, at my expense.) If it ain't one thing, it's another........ Bill

In theory, there's no difference between theory and practice. In practice, there is. My fate is not entirely in Gods hands, if I have a weapon in mine.

Bill, Try spreading some dried blood around your plants & the garden in general. Deer, rabbits, woodchucks etc. hate it. I've used it for years and has always seemed to work. You can get it at Lowe's, Home Depot or about any farmers coop. It also puts a lot of nitrogen in the soil. Pat

Got up this AM & made blueberry jam. Then had enough collards to put up two pints of collards greens & fatback.

The garden, this year has been a prolific one. The tomatoes are ripening quickly now. Sunday will be the day to make my picante sauce. There are 10 lbs. of Vidallia onions on the counter & tomorrow I'll be making sweet Vidallia onion relish. I've already made trial run of that relish and it is awesome! Put that on a good hotdog with mustard and it's heaven! Have put up pickled jalepeno & Anaheim peppers which are, of course, a necessary ingredient in my chili. The butternut squash seems to be overtaking the whole garden now & I'm seeing beautiful butternut squash everywhere! I put up six quarts of dill pickle & six pints of bread & butter pickles. I've already cheated & opened one quart of the dills. Heavenly! Got 24 pints of green beans canned also. Been a good summer so far.

Hey Pat, How about I send you a pint along with the rest of the stuff I promised? Got up at 5:30AM & went to work in the kitchen. Had to wash all the dishes first and then I made this beautiful Sweet Vidallia Onion relish. It has to be good because I spilled some on the floor & my dog went right after it!

Just finished making the picante sauce. It's a beautiful thing. This though, won't be the last batch that I make this year. This recipe is soooo good! Been making this recipe for about eight years now. Great on eggs in the morning, on burritos, with tortilla chips and very good with pork. The recipe calls for 3 tablespoons of sugar but I cut that in half. I like it on the hot side but my lady likes it mild as she can't handle the heat. When I was young and my digestive tract “cast iron” I loved this kind of stuff “smoking” hot! Not so much now.

For those interested in making this:
